Vous savez, sans doute, M. Brown, que la bonne cuisine française est un des plus grands plaisirs du touriste en France.
Je le sais bien, M. Picard. Je peux même dire que je la connais un peu, la cuisine française. Quand j’ai des clients importants, je les invite à déjeuner dans un des bons restaurants français ici à New York. Et cela arrive assez souvent.
La cuisine française nous fait cadeau de beaucoup d’expressions d’usage courant en anglais; par exemple: à la carte, bouillon, consommé, purée, sauté, au gratin, café, pe-tits fours, hors d’oeuvres, soufflé, et beaucoup d’autres. À propos, M. Brown, vous êtes dans l’importation. Quand vous serez à Paris, faites une liste de vos plats préférés, et ramenez un bon livre sur la cuisine française, en français, bien entendu.
Quelle bonne idée! Mais la cuisine française n’est-elle pas compliquée?
Pas vraiment. Il y a certains plats célèbres qui sont très compliqués, mais il n’y a rien de mystérieux dans la bonne cuisine française. Je vais vous dire les trois secrets.
Pour commencer, tout ce qui entre dans un plat doit être de bonne qualité: le beurre, les oeufs, la viande, les légumes, tout enfin; ensuite, il faut avoir le goût et l’amour de la cuisine; et après, du beurre, du beurre, et encore du beurre.

Most probably you know, Mr. Brown, that good French cooking is one of the greatest pleasures of the tourist in France.
I know it well, Mr. Picard. I can even say that I am fairly familiar with French cooking. When I have important customers, I invite them to have lunch at one of the good French restaurants here in New York. And this happens quite often.
French cooking gives us (has “gifter us with) many expressions well-accepted in English; for example: à la carte, bouillon, consommé, purée, sauté, au gratin, café, petits fours, hors d’oeuvres, soufflé, and many others. By the way, Mr. Brown, you are in the import business. When you are in Paris, make a list of your favorite dishes and bring back a good French cookbook—in French of course.
What a good idea! But isn’t French cooking complicated?
Not really. There are certain famous dishes which are very complicated but there is nothing mysterious in gond French cooking. I am going to tell you the three secrets.
First, everything that goes into a dish must be of good quality: the butter, the eggs, the meat, the vegetables, everything, in short; then, one must have a tasse for and a love of cooking; then, butter, butter, and more but-ter.
Thank you for the three secrets. I am going to tell them immediately to my wife.
